Well the time comes... my husband goes back to work today :( Always sad about that. Now I am left with my 4 kiddos. LOL!! Out numbered 4 to 1. Did not do much this weekend. Friday we stayed in. It was raining cats and dogs. So we decided to get some pizza for the kids and DH and some costa vidas for me. Costa Vidas is a really yummy mexican food place. The sweet pork salad is not too bad on calories, but if you eat the tortilla like I did, then it is not so healthy and you might even grow another butt cheek. Ha ha. My DH got the xbox live for Christmas and we decided to get the netflix to go with it. So Friday we watched The Mighty Ducks and Curly Sue with the kids, and Obsessed and Primal Fear after the kids went to bed. I figure well if I don't use it again this month at least I got my monies worth. Saturday we had a birthday party at Peter Piper Pizza, then came home and had turkey burgers with sweet potato fries (very yummy). So as you can see my weekend was not so eventful. I think I might take my kids to the park today. Javi, my oldest and I played some soccer this last week in the backyard and it showed me just how out of shape I am. Well I am a shape... round is a shape:P. Today is football day, which is exciting to me I love football, but sad my team is out of the playoffs (GOOOOOOOOOO Cardinals).
I think that I am going to make Vicki's Favorite Casserole tonight for dinner. My kids love it and it is very easy on the calories. I will post the recipe at the bottom. No plans as of yet for this week. Just going to hang out at the house. I keep trying to get my DH to fix my bike so me and the kids can go for a bike ride. The season is coming soon for both of my boys to do their sports. Carson wants to do soccer or t-ball and Javi wants to do tackle football. So I am thinking that I should take the last couple weeks that I have left and relax before our schedule starts to get crazy. I have really been thinking lately about going back to church. Then when it is time to go I talk myself out of it. I think... do I really want to get the kids ready to go to church? Do I really want to chase them around? Plus my DH works on Sundays so we would get up get dressed come home and he would have to leave right away.
I think my brother might come and watch some football with me today, but we will see. Been craving chocolate lately so I went and got the dark chocolate vita tops. YUCK YUCK YUCK. To dry for my taste. Plus with a taste like that and with that price, it is just not worth it to me. Maybe it is the flavor I got. I don't know but they are just disgusting and now I am left with 7 more. I need to go to the store and get me some Healthy Choice Steamers. I love those. Especially the chicken pesto. Plus they fill me up and I find that I am not snacking as much in the afternoon. Would love to know what others do when they are craving chocolate. I usually am not a chocolate person but lately just sounds so good. Well I better try and get some stuff done around the house while the kids are taking their naps.
Vicki's Favorite Casserole.
1 lb. of ground turkey
3 potatoes grated
3-4 carrots grated
1/2 - 1 onion (I only use 1/2)
1 can of reduced fat mushroom soup
3/4 cup skim milk
Pepper and Salt to taste. (preferable lots of pepper)
** Brown the turkey and onion, then in the same skillet add carrots and potatoes. Brown carrots and potatoes then add soup and milk. Let sit for approx. 5-7 minutes and stir until potatoes and carrots are cooked through. Salt and pepper to taste.
** This is one of my kids favs. If your kids have a hard time with eating their veggies, try this. My kids love veggies and fruits but I did have both my niece and another little girl over for dinner and they both loved it and ask for it when they come and stay the night!! Also my DH hates mushrooms but absolutely loves this too. Great filling meal for everyone that is even lighter on the wallet.
